Art Matilda is a sophisticated Lambic shaped by the unique Matildes microorganisms of the Can Partegàs farmhouse. This complex blend marries two-year-old spontaneously fermented beer with fresh stock, further refined by six months in oak barrels previously seasoned with Mistela del Vallès. The result is a vivid sensory journey, opening with sharp lactic tartness and deep barnyard funk characteristic of wild fermentation. The Mistela barrels contribute elegant notes of honeyed grapes and dried stone fruits, softening the acidic edge. With its dry, oak-inflected finish and rustic earthy undertones, it exemplifies a masterful balance between wild tradition and local terroir.

Appearance. Deep golden with orange hues from the Mistela barrels; clarity ranges from hazy to clear with a thin, white head that shows poor retention.

Aroma. High intensity with dominant lactic sourness and earthy barnyard, hay, and horse blanket funk; the barrel aging adds complex layers of honey, raisin, and vinous stone fruit; no hop aroma is present.

Taste. Initial sharp lactic tartness leads into a complex profile of bready malt and rustic funk; flavors of cider, rhubarb, and aged oak are present, complemented by a subtle vinous character from the Mistela barrels; bitterness is below threshold, balanced entirely by acidity; finish is very dry and lingering.

Mouthfeel. Medium-light body with low to moderate carbonation; features a high tart, puckering quality on the palate without being harshly astringent; very light alcohol warmth.
