Art Blanca
Art Blanca offers a rustic, organic reimagining of the classic Weissbier. It retains the quintessential fermentation profile, leading with distinctive banana esters and an aromatic dusting of nutmeg. The innovation lies in the use of local spelt (espelta), which adds a unique layer of baked apples to the sensory experience, elevating the traditional bready grain character. Visually inviting with a persistent, moussy white head over a hazy gold body, it delivers a creamy, fluffy texture on the palate. A high, spritzy carbonation cuts through the soft graininess, finishing dry and refreshing with a lingering hint of spiced orchard fruit.
Appearance. Pale gold (SRM 4) with a significant haze from the protein-rich spelt and yeast. Topped by a very thick, moussy, long-lasting white head with dense lacing.
Aroma. High intensity fermentation esters of ripe banana and baked apple, complemented by moderate phenolic notes of nutmeg and clove. A background of grainy, doughy spelt and wheat provides a solid malt foundation with negligible hop presence.
Taste. Initial impression is of soft, bready grain and creamy wheat and spelt. Flavors of banana and spiced apple dominate the mid-palate, balanced by a subtle, earthy nutmeg spice. Bitterness is very low, allowing the yeast character to shine through a clean, relatively dry finish.
Mouthfeel. Medium body with a notable fluffy, creamy fullness. Carbonation is high and effervescent, providing a lively, spritzy sensation without any harsh alcohol warmth.
