Appearance. Pale to medium straw color (SRM 2-4). Brilliant clarity despite the native fermentation. Low carbonation with a quick-fading, white rim of bubbles and no significant lacing.
Aroma. High intensity. Dominant aromas of sharp green apple, lemon zest, and white flowers. Native yeast provides complex secondary notes of damp earth, hay, and a faint farmhouse funk. Substantial barrel character adds whispers of toasted oak and spice.
Taste. Initial impression is bone-dry and vibrantly acidic. Intense flavors of Wickson apple and tart pineapple transition into a complex mid-palate of dried herbs and flinty minerality.
