Art + Science Quince Cider

This Specialty Cider showcases the rare, aromatic profile of foraged quince, masterfully transformed through a ten-month barrel fermentation. The sensory experience is led by a distinctive floral bouquet reminiscent of honeysuckle and rose, underpinned by the wild yeast's rustic, earthy funk. Keeving in concrete and the high natural pectin of the fruit provide a unique textural depth, while the barrel aging adds a whisper of seasoned wood. Despite its intensely fruity beginnings, the profile is remarkably dry and complex. Layers of tropical pineapple and tart guava evolve into a clean, slightly tannic conclusion, reflecting both the eccentric nature of the fruit and the unrefined elegance of the wild fermentation.
Appearance. Deep gold to light amber; brilliant clarity with a fine, lively effervescence from bottle fermentation. The head is thin, white, and dissipates rapidly, leaving a slight collar.
Aroma. High intensity with a complex layering of floral notes like jasmine and rose petals. Strong fruit character featuring pineapple, lemon zest, and the unique spicy-sweet scent of ripe quince. Moderate wild yeast esters provide an earthy, farmyard complexity, while very low notes of toasted oak are present from the ten-month barrel aging.
Taste. The initial impression is vibrantly fruity and floral, bursting with tropical pineapple and citrus. The fermentation is bone dry, stripping away sugar to reveal a firm, acidic structure. Mid-palate introduces a wild, spicy phenolic character and a subtle woody tannin. The finish is long and crisp, defined by a lingering tartness and a pleasant, fruit-skin astringency with no detectable bitterness.
Mouthfeel. Medium body with a silky, almost creamy texture attributed to the keeving process. Carbonation is high and prickly, enhancing the brightness of the fruit. A light, pleasant warmth is present from the alcohol, accompanied by a moderate level of mouth-drying tannin.
