This Specialty Cider presents a sophisticated dialogue between mature heritage fruit and American timber. Sourced from trees planted in 1989 at the White Oak Orchard, the cider displays a profound depth of character derived from old-growth apple varieties. The maturation in Quercus Alba barrels imparts a structured elegance, weaving threads of toasted vanilla and subtle coconut into a rustic, tannic apple base. Fermented with native yeasts, it reveals a complex, earthy background that complements the sharp acidity and wood-driven dryness, resulting in a refined yet wild expression of Alan Foster’s orchard legacy.
Appearance. Deep gold to burnished copper (SRM 6-9); brilliant clarity with a still to very light petillant carbonation that lacks any significant head or lacing.
Aroma. High intensity of ripe, bittersweet cider apples with a distinct leathery and earthy complexity from native fermentation. Pronounced American oak influence provides prominent notes of vanilla, toasted wood, and a hint of coconut. No malt or hop character is present.
Taste. Initial impression is bone-dry and intensely structural. The flavor is dominated by concentrated tart apple and skins, followed by a mid-palate of spicy oak, vanilla, and drying wood tannins. High acidity provides a sharp, clean counterpoint to the rich fruit. The finish is exceptionally long and dry, leaving a lingering impression of woody astringency and orchard earthiness.
Mouthfeel. Medium body with a firm, drying astringency from both fruit and wood tannins. Carbonation is very low, contributing to a wine-like texture. A light, pleasant alcohol warmth is present but well-integrated at 7.5% ABV.
