Bird Brain Perry captures the wild elegance of ancient pear trees from the Roth Family Farm, offering a sophisticated sensory profile shaped by fifteen months of barrel maturation. The nose is a delicate tapestry of ripe pear, floral blossoms, and soft vanillin from the oak. On the palate, the natural sweetness preserved through the traditional keeving process balances a firm, tannic structure typical of heritage fruit. Layers of dried spice and a subtle vinous funk emerge from the long barrel fermentation, leading to a lingering, dry finish that highlights the complex character of the pectic substances and heritage pears.
Appearance. Pale gold to soft straw color (SRM 3-5). Generally clear, though natural pectic substances from the keeving process may create a unique, viscous visual texture. Low to no head retention with minimal lacing, typical of traditional perry.
