This Imperial Saison delivers a bold sensory profile where contemporary hops meet traditional farmhouse character. Nelson Sauvin introduces sophisticated notes of white wine grapes and crushed gooseberries, while Cashmere layers in soft lemon zest and ripe melon. These are balanced by the earthy, herbal spice of Willamette. The fermentation profile is assertive, showcasing peppery phenols and pome fruit esters alongside a rustic, grainy malt backbone. At 8% ABV, the beer exhibits a refined alcohol warmth that complements its highly attenuated, bone-dry finish. Effervescent and complex, it represents a powerful, hop-forward evolution of the classic Saison style.
Appearance. Deep gold to pale amber with a slight haze. Supports a dense, persistent, rocky white head that leaves significant Belgian lace. Highly effervescent.
Aroma. High intensity. Prominent white wine and tropical fruit notes from Nelson Sauvin and Cashmere, underscored by earthy, spicy Willamette. Strong peppery phenols and pear-like esters blend with a clean, grainy malt base and a hint of warming alcohol.
Taste. Leading with spicy yeast and vibrant hop flavors of gooseberry, citrus, and dried herbs. Medium-low grainy malt sweetness is quickly overtaken by a firm bitterness and high attenuation. Finishes remarkably dry with a lingering peppery and resinous aftertaste.
Mouthfeel. Medium body with very high carbonation providing a prickly, effervescent sensation. Noticeable but smooth alcohol warmth. Crisp and refreshing despite the elevated gravity.
