Nevertheless is a vibrant New World Cider that showcases the bright acidity of Vermont and Pennsylvania cider apples. Fermented bone-dry with native yeasts in stainless steel, it exhibits a clean, focused profile where sharp apple character takes center stage alongside refreshing citrus notes. The wild yeast influence remains elegant and restrained, offering a subtle mineral complexity rather than heavy fermentation funk. At 6.9% ABV, it maintains a crisp, lean structure that emphasizes its tart fruitiness. The result is a refreshing, high-acid cider with a dry, mouth-watering finish that highlights the purity of its regional fruit origins.
Appearance. Pale straw color (SRM 2-3). Brilliant clarity. Tiny, fast-rising bubbles form a thin, fleeting white rim that leaves no lacing.
Aroma. High intensity of fresh-pressed green apples and lemon peel. Clean fermentation profile with a light, flinty mineral note from the native yeast. No sulfidic or farmyard aromas.
