ANXO Cider District Dry
This Heritage Cider presents a sophisticated, dry profile driven by a rotating blend of locally sourced heirloom apples. The sensory experience is defined by a crisp acidity and a complex tannic structure inherent to traditional cider fruit varieties. On the palate, expect a bright, vinous character with notes of tart green apple, dried hay, and a subtle, rustic earthiness. The fermentation is exceptionally clean, allowing the varietal expression of the heirloom fruit to shine through without excessive yeast esters. Its finish is remarkably parching and refreshing, echoing the charm of Mid-Atlantic orchards while maintaining a polished, modern clarity and a lean, elegant structure.
Appearance. Color ranges from pale straw to light gold (2–4 SRM). Brilliant clarity with a brief, effervescent white head that dissipates quickly, leaving little to no lacing.
Aroma. Moderate to high intensity of fresh and culinary apple notes. Character includes tart apple skin, floral apple blossoms, and a faint, clean earthiness. Yeast character is neutral, allowing the heirloom fruit to dominate with no significant sulfur or diacetyl.
Taste. Initial impression is sharply crisp and bone dry. High apple flavor with a mix of tart acidity and light, wood-like tannins. No perceptible residual sugar. Bitterness is low, derived from apple skins rather than hops. The finish is clean and very dry, with a lingering tartness and a subtle mineral note.
Mouthfeel. Medium-light body with moderate to high carbonation providing a lively, sparkling sensation. A light tannic astringency adds structure without being harsh. Alcohol provides a very subtle, well-integrated warmth at 6.9%.
