Savory Bones presents a vibrant, sensory-driven interpretation of a Gose, enriched by a complex medley of forest fruits and exotic spice. A bright lactic acidity leads the way, carrying concentrated notes of Raspberries and Blackberries, while the Currants and Blueberries provide a deep, slightly tannic complexity. The addition of Cervia Salt imparts a subtle, savory salinity that enhances the fruit's natural brightness. A delicate, woody warmth from Madagascar Pepper provides a sophisticated counterpoint to the tart berry profile. Light-bodied and effervescent, this beer balances its refreshing sourness with a dry, mineral-tinged finish that perfectly captures the brewer's experimental intent.
Appearance. Vibrant reddish-purple hue (SRM 7-10) with a fine-beaded, pale pink head that shows moderate retention. A slight haze is present due to the significant fruit additions and the underlying wheat-based malt profile.
Aroma. High intensity aroma dominated by fresh Raspberries and tart red Currants. Background notes of Blackberries and Blueberries add a jammy, dark fruit depth. A distinct, floral, and woody spiciness from Madagascar Pepper emerges as the beer warms. Malt is secondary, presenting as a soft, crackery wheat. Clean lactic sourness provides a sharp, refreshing edge with no hop aroma.
Taste. Initial impact of sharp lactic acidity and tart forest fruits, specifically Raspberry and acidic Currant. The Cervia Salt provides a balanced savory character that heightens the fruit flavors. Malt flavor is low, offering a subtle doughy wheat foundation. The Madagascar Pepper introduces a dry, earthy spice towards the back of the palate. Bitterness is nearly absent, allowing the acidity to provide structure. Finishes very dry and crisp with a lingering mineral and berry skin character.
Mouthfeel. Medium-light body with a refreshing, crisp mouthfeel. Carbonation is high and effervescent, enhancing the perceived tartness. No alcohol warmth is present. A very slight tannic astringency from the berry skins and pepper adds a pleasant structural texture.
