Cervezas Antiga

This White IPA presents a vibrant sensory fusion where the Mosaic hop variety takes center stage, delivering an explosion of ripe tropical fruit, specifically mango, papaya, and sweet melon. The grist, composed of 60% Pilsner malt and 40% wheat, provides a clean, cereal-forward foundation with a signature silky texture. Despite the softness imparted by the wheat, the beer maintains a light and decidedly dry character. It balances the high aromatic intensity of its New World hops with a crisp, refreshing finish, embodying a modern, hop-forward take on the style that emphasizes fruit-forward complexity over traditional spice.

Appearance. Straw to pale gold (4-6 SRM). Moderate to high haze due to the 40% wheat content. Persistent, dense white head with excellent lacing.

Aroma. High intensity hop-forward aroma featuring prominent notes of mango, papaya, and melon. Underlying hints of citrus and blueberry. The malt profile is low but present, offering a clean, bready, and slightly grainy wheat character with no phenolic or spicy yeast notes.

Taste. Initial hop impact of tropical fruit and melon from the Mosaic. Moderate-high bitterness is clean and well-integrated. The malt flavor is bready and cracker-like from the Pilsner and wheat base. Fermentation is clean with no significant esters. Finishes dry and crisp with a lingering fruity hop aftertaste and a light cereal finish.

Mouthfeel. Medium-light body with a notable silky, creamy texture from the high wheat addition. Moderate-high carbonation. Very light, well-integrated alcohol warmth at 6% ABV. No astringency.
