Antiga Torna reinvents the German Pils through a uniquely Valencian lens, born from a two-year collaboration with Darwin to isolate an indigenous wild yeast. The sensory profile is defined by a crisp, lean backbone provided by the rice adjunct, which lends a delicate grainy sweetness and a subtle starchy aroma to the nose. This foundation is elevated by the bright, zesty character of orange peel, integrating seamlessly with traditional spicy and herbal hop notes. The specialized yeast provides a distinct local fingerprint, maintaining the clean fermentation character expected of the style while enhancing the beer's bright citrus vibrancy and refreshing, dry finish.
Appearance. Straw to pale gold (3 SRM). Brilliant clarity. Persistent, creamy white head with excellent lacing.
Aroma. Moderately high intensity. Distinct notes of fresh orange zest and a delicate, starchy rice aroma mingle with traditional spicy and herbal hop character. The malt profile is low, presenting as light crackers. Clean fermentation profile with a subtle, unique floral ester from the indigenous yeast.
Taste. Crisp initial bitterness quickly followed by the bright, tangy flavor of orange peel. The rice adjunct provides a very light, clean, and grainy malt foundation. Hop flavors are herbal and floral, balancing the citrus. High bitterness persists into a very dry, clean, and refreshing finish. Well-attenuated with a lingering citrus and spicy hop aftertaste.
Mouthfeel. Medium-light body with a crisp, refreshing mouthfeel. High carbonation provides a lively, tingly sensation on the tongue. No alcohol warmth. Smooth and clean, without any astringency from the citrus peel.
