This reimagined Cream Ale presents a sophisticated sensory journey, blending traditional crispness with wild complexity. The foundation of Pilsen and Caramel malts provides a delicate sweetness that has been transformed by six months in Tempranillo barrels. Expect a bold aromatic profile driven by Brettanomyces, offering layers of rustic funk and leather that meld with distinctive notes of red grape and toasted coconut from the oak. Nugget hops contribute a restrained, earthy bitterness that balances the vinous character. The result is a unique, medium-bodied fusion that trades the style's typical effervescence for a stiller, wine-like elegance and a dry, lingering finish.
Appearance. Deep gold to light amber with distinct copper-rose highlights from the Tempranillo barrels (7–10 SRM). Pours with a low, creamy off-white head that dissipates quickly due to the barrel aging process and lower carbonation. Slight haze is present from the wild yeast and oak tannins.
Aroma. High intensity and layered. Prominent wild yeast character featuring barnyard, horse blanket, and earthy funk from the Brettanomyces. This is complemented by vinous red fruit, cherry, and subtle vanilla-coconut notes from the oak. Low sweet malt aroma with a faint floral hint from the Nugget hops.
Taste. An initial soft malty sweetness from the Pilsen and Caramel malts is quickly superseded by a complex tartness and dry vinous character. Flavors of dark grape skins and toasted oak coconut are evident. The Brettanomyces provides a savory, rustic depth. Low hop bitterness (18 IBU) and minimal hop flavor. The finish is notably dry, clean, and slightly acidic with a lingering oak-driven complexity.
Mouthfeel. Medium-bodied with a smooth, slightly rounded texture enhanced by oak contact. Carbonation is notably low, diverging from the standard style to emphasize the wine-barrel character. Very low alcohol warmth at 5% ABV. Finishes with a slight, pleasant tannic astringency.
