Wildly fermented and matured in barrels, it showcases the vibrant synergy between handpicked local apples and the deep, vinous character of Dornfelder grapes. The sensory profile is marked by a sharp, refreshing acidity and a complex 'wilde' funk, delivering notes of leather, damp earth, and farmhouse character. Dornfelder grapes contribute a dark fruit intensity reminiscent of plums and black cherries, providing a tannic structure that balances the crisp apple base. The result is a bone-dry, effervescent hybrid with a lingering tartness and subtle oak-driven depth.
Appearance. Deep ruby to garnet with purple highlights; clarity is generally clear to slightly hazy with a fine, fast-fading pinkish-tan head that leaves minimal lacing.
Aroma. High intensity of wild aromatics including horse blanket and leather; dominant dark fruit notes of Dornfelder grapes (plum, black cherry) are layered over sharp malic apple and a hint of spicy oak.
Taste. Initial impression is sharply tart and bone-dry. The palate features a complex blend of tannic grape skins and rustic apple pomace, supported by a significant lactic and malic acidity. Fermentation character is intensely wild with earthy and funky notes. The finish is very dry, clean, and lingering with a vinous, mouth-watering aftertaste.
Mouthfeel. Medium-light body with a high, prickly carbonation that enhances the perceived acidity. A noticeable alcohol warmth is present but well-integrated, accompanied by a light tannic astringency from the grape skins and wood.
