This Saison captures a coastal forest breeze, blending the rustic depth of Belgian yeast with the resinous spirit of the South Atlantic. It opens with an aromatic profile of herbal conifers and earthy pine, supported by a backbone of base malts and subtle caramel. The palate is light and crisp, where citrusy needle-like notes meet the classic spicy phenolics of a traditional farmhouse ale. Crystal clear and light amber in the glass, it offers a refined balance of refreshing carbonation and mild malt sweetness, finishing exceptionally dry. It is an evocative, drinkable collaboration that bridges forest floor earthiness with a bright, effervescent finish.
Appearance. Light amber in color (8-10 SRM). Brilliant and crystalline clarity. Voluminous, dense ivory head with excellent retention and Belgian lace.
Aroma. Moderate to high intensity. A pleasantly aromatic mix of fruity-spicy yeast featuring notes of black pepper and pome fruit. Prominent herbal and resinous conifer character. Malt is lightly grainy with a faint caramel touch.
Taste. Balanced fruity and spicy yeast profile with moderate hop bitterness. Flavors of earthy resin and citrusy pine are prominent. Malt flavor is low to medium with soft graininess and light caramel sweetness that transitions quickly into a very dry, refreshing finish. Highly attenuated with a spicy, clean aftertaste.
