Complementing this rustic grain character are bright, tropical notes of pineapple and stone fruit derived from NY-grown Excelsior hops. Fermented with a melange of yeasts and bottle-conditioned, the beer offers a nuanced, living complexity that remains highly digestible. It strikes a refined balance between farmhouse earthiness and a clean, dry finish, embodying a graceful, light-orange expression of French brewing tradition.
Appearance. 8-10 SRM. Light orange to burnished gold with a slight yeast-driven haze. Pours with a persistent, creamy off-white head that leaves delicate lacing.
Aroma. Moderate intensity with a prominent toasty and bready malt richness. Distinct spicy and peppery notes from the Danko Rye interact with moderate tropical fruit esters—reminiscent of mango and papaya—from the Excelsior hops. A clean fermentation profile with very low earthy yeast character.
