This massive Imperial Stout offers an opulent sensory journey, shaped by its maturation in Missouri oak Foeders. The profile is dominated by an intensive infusion of ripe bananas, yielding a dense, tropical sweetness that melds seamlessly with the creamy, aromatic depth of Madagascar Vanilla Beans. Layers of both toasted and raw coconut provide a decadent, nutty richness, enhancing the beer’s velvet-like texture. Dark chocolate and roasted malt undertones anchor the sweetness, while the Missouri oak imparts subtle wood tannins and structural complexity. At 15% ABV, it delivers a profound, well-integrated warmth that lingers alongside notes of caramelized fruit and dark cocoa, finishing with immense depth.

Appearance. Jet black and completely opaque. It pours with a thick, viscous consistency that forms prominent dark brown "legs" on the glass. The head is a dense, deep tan foam with moderate retention and light lacing.

Aroma. High intensity and profoundly complex. Immediate waves of caramelized banana and rich Madagascar vanilla are supported by heavy toasted coconut and raw coconut milk. Beneath the adjuncts lies a robust base of dark chocolate, espresso, and charred wood from the Missouri oak Foeders, with a noticeable but smooth alcohol presence.

Taste. An initial explosion of sweet, overripe banana and creamy vanilla beans. The mid-palate reveals layers of shredded coconut and bittersweet chocolate. Firm roasted malt bitterness provides a necessary counterpoint to the high residual sweetness, while the foeder aging contributes a dry, woody spice. The finish is long and indulgent, featuring lingering notes of cocoa, toasted nuts, and tropical fruit.

Mouthfeel. Exceptionally full-bodied and chewy with a luscious, velvety texture. Carbonation is low to moderate, allowing the syrupy weight to coat the palate. Significant alcohol warmth is present and noticeable, yet remains smooth and integrated rather than harsh or solventy.

We worked hard to get the banana character to come out in this beer, it was definitely much more difficult than we anticipated. Literal tons of bananas later, trying different kinds of bananas, pushing off the release until we got it right, the result is amazing.
