Anchorage Brewing Company’s All Seeing is a masterfully layered Wild Specialty Beer that exemplifies the depth of mixed-culture fermentation. Aged in oak foeders, this blueberry sour presents a complex interplay between bright, jammy fruit and rustic, earthy funk. The aroma is dominated by fresh berry skins and leather, while the palate delivers a sharp but balanced lactic acidity that heightens the blueberry character. Tannic structure from the wood provides a sophisticated, dry finish. Appearance. Deep purple to ruby-red hue; slightly hazy with visible sediment from the mixed culture and fruit; moderate pinkish-white head with fair retention and light lacing.
Aroma. High intensity with prominent fresh blueberry skin and jammy notes. Complex funk including leather, hay, and earthy barnyard notes from Brettanomyces. Sharp lactic acidity is present alongside subtle vanillin and toasted oak from foeder aging.
Taste. Initial burst of tart blueberry fruit followed by a complex, multi-dimensional sourness. Malt is minimal, providing just a lean cracker-like support.
