The hop profile is sophisticated, featuring three kettle additions of Nelson Sauvin for a distinct white wine and gooseberry character. A dry-hop blend of Nelson Sauvin, Citra, and Cascade introduces a refreshing layer of citrus, grapefruit, and floral pine. Appearance.Deep copper with a distinct reddish-brown hue (14-17 SRM). Topped by a moderately large, off-white head with good retention and light lacing. Generally quite clear.
Aroma.Moderate to high intensity. Rich caramel and toasted malt aromas are supported by a unique, earthy maple sweetness. The hop character is prominent, displaying citrus, grapefruit, and tropical fruit notes from Citra and Cascade, alongside the vinous, white-grape qualities of Nelson Sauvin. Clean fermentation with very low esters.
Taste.Initial malty sweetness featuring layers of caramel and biscuit, accented by a subtle, woody maple character. This is quickly balanced by moderate to moderately-high hop bitterness and flavors of grapefruit zest and resin. The Nelson Sauvin adds a complex fruitiness reminiscent of white wine. The balance is well-integrated, leading to a medium-dry finish where caramel and hop oils linger pleasantly without being harsh.
Mouthfeel.Medium to medium-full body with a smooth, slightly velvety texture. Moderate to high carbonation provides a refreshing bite. Very light, well-integrated alcohol warmth is present at 6% ABV. No astringency.
