Appearance. Deep pink to light red hue (4–7 SRM including fruit influence); moderate, pink-tinged white head with fair retention and tight bubbles; hazy to opaque due to wheat proteins and raspberry solids.
Aroma. Moderate to high intensity; dominant notes of fresh, tart raspberries and fragrant, needle-like rosemary. Low bready wheat malt supports the fruit. Lactic sourness provides a sharp, clean edge. No hop aroma. Subtle sea-spray salinity and a floral, herbal quality from the rosemary integration.
Taste. Initial impression is a burst of tart raspberry juice followed by a savory, aromatic rosemary herbal note. Low bready malt flavor. Noticeable lactic acidity is medium-high but balanced. Light salt character provides a mouthwatering, mineral finish. Bitterness is very low. No hop flavor. Finishes dry and refreshing with lingering notes of berry skin and piney herb.
