Imperial IPA 8 º
Going Twice is an intensely aromatic Double IPA that showcases a high-definition hop profile through the use of concentrated extracts and advanced pellets. A vibrant fusion of Simcoe DynaBoost and Krush HyperBoost delivers sharp resinous pine alongside lush mango and peach notes. Idaho 7 Cryo introduces complex layers of zesty grapefruit and dried apricot, while the addition of Nectaron T90 provides a deep, tropical finish of passionfruit and pineapple. The beer maintains a lean, clean malt profile that supports the 8% alcohol content without becoming heavy, resulting in a bright, dry, and assertively bitter finish that highlights its modern hop saturation.
Appearance. Deep gold to light orange-copper (8-10 SRM) with a slight, modern haze. It features a moderate-sized, persistent, off-white head with excellent lacing.
Aroma. Intense hop-forward aroma featuring dominant notes of passionfruit, mango, and zesty citrus. Underlying layers of resinous pine and stone fruit are supported by a neutral, grainy malt presence and a clean fermentation profile.
Taste. Explosive hop flavors of pineapple, apricot, and grapefruit peel. The bitterness is high but clean and devoid of harshness, balanced by a minimal, soft malt character. The finish is dry and crisp with a long, resinous, and tropical fruity aftertaste.
Mouthfeel. Medium-bodied with a smooth, slightly oily texture from the high hop oil concentration. Carbonation is moderate-high, providing a crisp bite, accompanied by a gentle, well-integrated alcohol warmth.
