Cellar Whispers is a sophisticated Saison that balances rustic farmhouse tradition with the refined influence of wine barrel aging. Poured into the glass, it reveals a complex bouquet of stone fruit esters—evoking sun-ripened apricots and peaches—intermingled with soft, earthy funk and a delicate peppery spice. The wood aging introduces elegant layers of toasted oak and a whisper of vinous character that complements the grainy malt base. On the palate, a subtle acidity sharpens the fruit notes, leading to a bone-dry, highly effervescent finish. This strong farmhouse ale offers a masterclass in balance, where cellar-driven character meets a crisp, refreshing spirit.
Appearance. Deep gold to pale orange (8 SRM) with a slight, persistent haze. Crowned by a dense, rocky, ivory head that exhibits excellent retention and leaves intricate Belgian lace on the glass.
Aroma. High intensity with a multifaceted profile of spicy black pepper and fruity esters reminiscent of nectarines and plums. The wine barrel aging contributes clear notes of toasted oak and a mild leathery funk, underpinned by a low, grainy malt sweetness and a hint of floral, earthy hops.
Taste. Initial impression is bright and fruity, followed by a rustic, grainy malt backbone. Moderate hop bitterness is well-integrated with a subtle acidity from the wine barrel influence. Flavors of dried apricot and oak tannins are prominent. It concludes with a very dry, peppery finish and a lingering, clean aftertaste.
Mouthfeel. Medium body with a lively, high carbonation that creates a prickly, effervescent sensation. A gentle alcohol warmth is present but well-integrated, accompanied by a faint tannic astringency from the oak that enhances the dry finish.
