Amundsen’s Release The Cranachan is an intriguing Wild Specialty Beer that reimagines the traditional Scottish dessert through a tart, funky fermentation. A dark base of roasted malts and toasted oats provides a structural foundation for an explosion of juicy raspberries. The wild microbes have transformed the sweetness into a sharp, lactic acidity, accented by earthy Brettanomyces notes and subtle hints of honey and oak. Despite its dark appearance, the palate remains lively and crisp, blending the vinous character of a wild ale with the chocolatey undertones of a stout, resulting in a vibrant and deeply layered sensory experience.

Appearance. Deep dark brown to opaque black (SRM 38+). Features a persistent, creamy tan head with a distinct pinkish tint. Clarity is opaque due to the dark malt base and fruit additions.

Aroma. High intensity aromatics of sharp, tart raspberries and lactic acidity. Earthy, leathery Brettanomyces funk is present, layered over a backdrop of roasted malts, dark chocolate, and toasted oats. Low floral honey notes and a faint hint of spirit-like warmth.

Taste. Initial impression is sharply acidic and fruit-forward with bright raspberry flavors. The malt profile offers dark chocolate and coffee notes, but the fermentation is quite dry, lacking the heavy sweetness typical of pastry stouts. A subtle oat-like creaminess is countered by lactic sourness. Finishes dry and tart with lingering red fruit and a mild earthy funk.

Mouthfeel. Medium body, which feels lighter than a typical stout due to the attenuative nature of wild fermentation. Moderate carbonation adds a crisp, tongue-tingling sensation. Very low astringency from fruit skins and a subtle, well-integrated alcohol warmth.
