This Hazy IPA, a collaboration with Yakima Chief Hops, showcases the expressive potential of HBC 630 and HBC 630 Cryo hops. The profile is defined by an explosive, candy-like bouquet where vivid notes of sweet cherry and raspberry intermingle with soft peach and tropical stone fruit. Visually, the beer presents a glowing, opaque gold crowned by a persistent, meringue-like white foam. On the palate, the hop-forward character remains lush and juicy, supported by a neutral, grainy malt base that allows the unique berry and stone fruit qualities of the hops to shine. A pillowy, smooth mouthfeel and restrained bitterness ensure a drinkable, fruit-driven finish typical of the New England style.
Appearance. Straw to deep gold (SRM 4-6). Opaque, hazy appearance with a soft glow. Features a dense, rocky, meringue-like white head with high retention and significant lacing.
Aroma. High intensity hop aroma dominated by sweet cherry, raspberry, and peach nectar. Subtle tropical notes of melon and mango appear in the background. Malt is low and neutral, presenting as fresh grain or light bread. Clean fermentation profile with integrated fruity esters.
Taste. Very high fruity hop flavor mirroring the aroma, specifically ripe red berries and stone fruits like apricot. Low to medium-low bitterness that is smoothly integrated. Malt flavor is low, providing a supportive grainy backbone without toast or caramel. The finish is off-dry and soft, with a lingering fruit-skin aftertaste.
Mouthfeel. Medium-full body with a characteristically soft, pillowy, and smooth texture. Carbonation is moderate. No harshness or astringency is present, though a very light, well-integrated alcohol warmth may be perceived.
