Double Down (2024) is a bold American IPA that pays homage to the resinous roots of the West Coast style. Intense aromatics of pungent pine and damp earth from Simcoe and Columbus lead the sensory profile, followed closely by the vibrant orange zest and floral notes of Amarillo and Centennial. A robust, malty backbone provides a necessary platform for the aggressive, tongue-coating bitterness. The palate is defined by a clean fermentation profile that allows the interplay of citrus and spicy hop oils to shine against a backdrop of toasted grain. It finishes decidedly dry and bracing, leaving a lingering trail of grapefruit pith and evergreen.
Appearance. Deep gold to light copper (8-11 SRM). Brilliant clarity. Moderate off-white head with excellent persistence and thick lacing.
Aroma. High intensity hop aroma featuring resinous pine, spicy grapefruit, and a touch of damp earth. Amarillo and Centennial provide bright orange and floral esters, while Simcoe adds a woodsy complexity. Low to medium-low malt notes of toasted bread and light caramel support the hops.
Taste. Firm initial impression of hop-derived resin and citrus pith. Hop flavors of orange, pine, and spice from Columbus and Centennial dominate. The malt backbone is prominent but clean, offering a toasted grain sweetness that balances the very high bitterness. Finishes dry to medium-dry with a lingering, clean, hoppy aftertaste.
Mouthfeel. Medium body with a smooth, slightly oily texture. Moderate to high carbonation. Very light, well-integrated alcohol warmth with no harshness or astringency.
