Ampersand Brew Co

Camphillsner is a rustic, unfiltered take on the German Pils, bridging regional traditions with intentionality. The use of English malt provides a sturdy base of toasted cracker and light honey, while the choice of German hops delivers a persistent bouquet of floral and herbal spice. Though fermented with a traditional Czech yeast, the profile remains exceptionally clean, highlighting a firm bitterness that defines the style. This unfiltered lager retains a soft textural depth while maintaining a crisp, highly attenuated finish. It is a refreshing, hop-forward experience where the heritage ingredients harmonize to create a bright yet nuanced sensory profile.

Appearance. Straw to light gold (3 SRM); persistent, creamy white head with excellent lacing; hazy to translucent appearance due to being unfiltered.

Aroma. Moderate-high intensity featuring floral, spicy, and herbal German hops. Supported by a low to medium grainy-sweet and doughy English malt character with hints of honey and toasted cracker. Exceptionally clean fermentation profile.

Taste. Initial doughy malt sweetness is rapidly overtaken by a firm, floral hop bitterness. Mid-palate reveals toasted cracker and herbal notes typical of German hops. Finishes very dry and crisp with a lingering, clean bitterness and a touch of flinty minerality.

Mouthfeel. Medium-light body with moderate-high carbonation. Refreshing and crisp without being harsh; features a slight creaminess from the unfiltered proteins and yeast in suspension.
