Ammonite Vinifera I - Pinot Gris is an elegant Grape Ale that masterfully bridges the worlds of spontaneous fermentation and fine Alsatian viticulture. The extended seven-month maceration with Pinot Gris grapes imparts a sophisticated bouquet of poached pear, honeysuckle, and white peach, while a year of aging in Pinot Noir casks adds a haunting layer of soft oak and faint red fruit. The spontaneous fermentation provides a nuanced, rustic depth that supports the vinous acidity without overwhelming the delicate fruit. It drinks with the refined effervescence of a sparkling wine, offering a crisp, mineral-forward profile that finishes exceptionally dry and clean.
Appearance. Presents a brilliant deep gold color with occasional copper highlights (6-8 SRM). The white head is fine-textured with medium-low retention, leaving a light, wispy ring of lacing around the glass.
Aroma. High intensity with a dominant vinous character. Prominent notes of ripe apricot, melon, and floral honey from the Pinot Gris varietal. Low malt presence of cracked grain is complemented by a delicate, rustic spontaneous character, showing hints of hay and aged oak, with a subtle spicy phenol edge and no hop aroma.
Taste. The initial impression is brightly acidic and fruit-forward, featuring vivid flavors of pear and stone fruit. The malt character is low and supportive, providing a neutral canvas for the grape. Hop bitterness is very low, allowing the natural tartness of the fruit and a light tannic grip from the Pinot Noir casks to provide balance. The finish is bone dry and crisp, with a lingering mineral aftertaste.
Mouthfeel. Medium-light body with high, sparkling carbonation that enhances the aromatic lift. A light, pleasant astringency from the seven-month skin contact provides structure, while the 6.5% ABV offers a very subtle, well-integrated warmth.
