This vintage-driven beer presents a vivid sensory experience where the sharp, vibrant acidity of the fruit takes center stage. The immersion infusion technique ensures a pure, bright red fruit expression without excessive tannin extraction. Expect a profile defined by complex fermentation notes—think leather, damp earth, and farmhouse funk—seamlessly integrated with the searing tartness of fresh berries. It is a bone-dry, wine-like Wild Specialty Beer that prioritizes elegance and terroir-driven character.
Appearance. A striking, brilliant deep pink to ruby-red hue (20-25 SRM) with a fine, pink-tinted head that dissipates fairly quickly. Clarity is generally high, though a slight, natural haze may be present from the high fruit concentration.
Aroma. High intensity aromatics featuring sharp, acidic redcurrant and pomegranate. Deeply complex fermentation character provides layers of horse blanket, aged leather, and a dusty cellar musk. Subtle woody notes and a lemon-like lactic tartness round out the bouquet.
Taste. The initial impression is one of bracing, clean acidity and vibrant red fruit. Intensely tart redcurrant flavors dominate the mid-palate, supported by a rustic, funky complexity. Mouthfeel. Light-bodied with a crisp, effervescent carbonation that enhances the perception of dryness. A very slight, pleasant tannic astringency from the redcurrant skins provides structure. No alcohol warmth is detected.
