1/3 Foeder
2/3 Barrel
50% ex-Pinot Noir wine barrels
50% ex-Chardonnay wine barrels
Symphonie was born from the simple principle applied in winemaking and wine ageing: heterogeneity creates complexity. The very identity of the Ammonite brewery.
