The sensory experience is led by an intense, jammy cassis aroma intertwined with the complex, earthy funk of horse blanket and leather typical of spontaneous fermentation. The barrel aging contributes a structured oak backbone and delicate tannins that complement the sharp, vinous acidity of the fruit. On the palate, the deep berry richness is balanced by a bone-dry finish and high effervescence, making this Fruit Beer an elegant, terroir-driven expression of fruit and funk without any cloying sweetness.
Appearance. Deep, saturated violet to dark beet-red color (35+ SRM). Pours with a moderate, pink-tinted head that shows fair retention and leaves light lacing. Appearance is hazy to nearly opaque due to the high fruit concentration.
Aroma. High intensity of dark, tart blackcurrant and jammy fruit. Significant wild yeast character featuring barnyard funk, wet hay, and earthy leather. Low oak-derived vanilla and wood notes are present. Malt is nearly imperceptible, while hop aroma is absent.
Taste. Initial impression is sharply tart and fruit-forward. Intense flavors of blackcurrant skins and dark berries dominate, supported by a complex, funky fermentation profile including lemon-like lactic acidity and earthy notes. Minimal malt flavor. Hop bitterness is very low, as the profile is balanced by acidity and fruit tannins. The finish is very dry, crisp, and lingering with a tart berry aftertaste.
Mouthfeel. Medium-light body with a lean, crisp texture. Carbonation is high and prickly, enhancing the perception of acidity. Low alcohol warmth. Noticeable but pleasant tannic astringency from the fruit skins and barrel aging adds structure to the palate.
