Ambar Trufada is a profound exploration of terroir, centered on the prestigious black truffle of Aragon. This Experimental Beer pours a brilliant reddish mahogany, showcasing artisanal floor-malted barley that provides a robust, toasty foundation. The seven-month maceration process yields an evocative sensory profile defined by damp earth, warm root, and the distinct, savory musk of fresh truffle. On the palate, a gentle bitterness supports a uniquely silky and slightly oily texture. As the liquid warms, the complex fungal character intensifies, harmonizing with the rich malt sweetness for a sophisticated, lingering finish that masks its strength with elegant precision.
Appearance. Brilliant clarity with deep reddish-mahogany hues (SRM 18-22). Topped by a persistent, fine-textured, light tan head with moderate lacing.
Aroma. High intensity earthy and fungal notes dominate, reminiscent of damp soil, forest floor, and distinctive black truffle. Underlying these are rich, bready, and slightly toasty malt scents derived from traditional floor malting. Hop aroma is negligible, allowing the savory, root-like characteristics to remain primary.
Taste. Initial impression is a balance of malt sweetness and savory earthiness. The truffle flavor is pronounced yet integrated, evolving from subtle to notable as the beer warms. Malt flavors of toasted crust and soft caramel provide a sturdy base. Bitterness is low to moderate and smooth, leading to a clean, slightly savory finish without harshness.
Mouthfeel. Medium-full body with a notable silky, slightly oily texture that coats the palate. Carbonation is moderate. Alcohol warmth is very well-integrated and subtle for 6.5% alcohol by volume. No significant astringency.
