Ambar Trigal
Ambar Trigal is an evocative Weissbier that fuses the traditional German wheat profile with the rugged landscape of the Monegros desert. Brewed with Dorondón durum wheat, this beer offers a complex sensory journey marked by the aromatic influence of sabina wood, juniper, and sage. While the classic banana and clove phenols provide a familiar backbone, the infusion of ancient woods and herbs introduces a surprising balsamic depth and a refreshing natural acidity. At 6% ABV, it presents a slightly more robust character than a standard wheat beer, delivering an autumnal profile that transitions from crisp citrusy notes when cold to a warm, woody complexity as it breathes.
Appearance. Pale straw to deep gold (3-6 SRM). It features a characteristically thick, moussy, and long-lasting white head with excellent lacing. The body is moderately hazy due to the high protein content of the Dorondón wheat and suspended yeast.
Aroma. High intensity with a multifaceted profile. Dominant banana esters and spicy clove phenols are layered over a base of bready, doughy wheat. Distinctive secondary notes of resinous sabina wood, herbal sage, and piney juniper provide a unique balsamic character, complemented by a subtle, refreshing acidity and a light floral hop background.
Taste. The initial impression is of soft, grainy wheat and bready malt sweetness, quickly followed by a balanced interplay of banana and clove flavors. Mid-palate, the sabina wood and herbal botanicals emerge, adding a savory, resinous complexity. Bitterness is very low (within the 8-15 IBU context), ensuring a well-rounded, flavorful palate. The finish is relatively dry with a lingering hint of wood-driven spice and a clean, tart edge.
Mouthfeel. Medium body with a fluffy, creamy fullness that feels substantial yet refreshing. Carbonation is high and spritzy, creating an effervescent sensation on the tongue. At 6% ABV, there is a very light, well-integrated alcohol warmth that enhances the autumnal character without being harsh or fusel.
