The sensory profile is led by a lively bouquet of spicy black pepper phenols and expressive fruity esters reminiscent of lemon zest and crisp Bosc pear. Underlying this glittering fermentation character is a rustic, grainy malt foundation and a floral, earthy hop presence. True to its farmhouse roots, the palate is exceptionally dry and highly attenuated, offering a firm bitterness that cuts through the medium-light body. It is a bold, rhythmic ale that balances rustic complexity with a clean, snappy finish.
Appearance. Deep gold to pale orange with a slight haze. It supports a dense, long-lasting, rocky white head that leaves intricate Belgian lace on the glass.
Aroma. High intensity aromatic profile featuring a complex blend of spicy black pepper and fruity esters like citrus peel and pome fruit. Low floral and earthy hop notes complement a soft, grainy malt scent.
Taste. Initial impression is bright and dry. Dominant flavors of peppery spice and citrusy yeast esters are balanced by a low, grainy malt character that quickly fades into a moderate-high hop bitterness. The finish is very dry and refreshing with a lingering spicy aftertaste.
