Amager Bryghus – Cardamom for Christmas:

The Swedes get it. The Danes…… well, not so much. We are talking about cardamom – that exotic and utterly delicious spice with such a sophisticated and enticing aroma. In Denmark we usually bring out our jar of cardamom for Christmas, using it for Xmas cookies, for æbleskiver or for klejner, while the Swedes use it all year round for their yummy kardemummabullar – and pretty much everywhere else they see a chance to add it. And then there is India, the original homeland of cardamom. Cardamom may not exactly be king, but almost, as it is often referred to as the Queen of Spices. Curry wouldn’t exist without cardamom – well, the whole of Indian cuisine wouldn’t exist without it. In Calcutta this Queen of Spices has an otherworldly or almost God-like status in a deeply occult group of people calling themselves The Cardamom Cult of Calcutta. They are an intensely secretive society, revealing very little about their worship of cardamom. The fact that their leader shares some resemblance with Santa Claus has led some scholars to believe that the cult is seriously engaged in Christmas baking. This, however, is most likely a misunderstanding based in a westernized perception of religion – and cookies.

At Amager Bryghus we don’t engage in religion, and our Christmas baking has been outsourced into the much more capable hands of Lady Anne-Mette. But we want to do our part in promoting the wonderful spice that is cardamom, and what better way of doing that than celebrating it in this Imperial Winter Porter.
