This massive Imperial Stout presents a decadent sensory profile shaped by a double mash and fifteen months in Woodford bourbon barrels. The grain bill, featuring Pilsner and Munich malts, provides a deep backbone for layers of Chocolate and Roasted Barley. The inclusion of Oat malt, Wheat malt, and Golden Naked Oats creates a luscious, velvety texture. Distinctive earthy and citrus notes from Columbus and Lemondrop hops peek through the intense dark chocolate and espresso core. Expect rich vanilla and toasted oak from the extended aging, while Cara-Munich 2 adds subtle caramel depth to this complex, warming masterpiece.
Appearance. Jet black and opaque (40+ SRM). It pours with a thick, creamy, deep tan head that shows moderate retention and leaves significant lacing. Visible viscosity is apparent through slow-moving legs on the glass.
Aroma. High intensity. Dominated by dark chocolate, roasted coffee beans, and burnt grain. Significant barrel character introduces rich vanilla, toasted oak, and a hint of spicy bourbon. Subtle dark fruit esters like prunes and raisins from the UK-Ale yeast mingle with a low earthy hop note and a whisper of citrus.
Taste. Initial explosion of bittersweet chocolate and espresso. The malt profile is complex, showing breadiness and caramel. Hop bitterness is firm but balanced by the massive residual malt solids, providing a long, bittersweet finish. Bourbon-soaked oak and vanilla are prominent throughout. A faint citrus brightness from the hops provides a delicate counterpoint to the heavy roast.
Mouthfeel. Full to very full-bodied with a chewy, viscous, and oil-like texture enhanced by the high oat and wheat content. Carbonation is low to moderate. A smooth, well-integrated alcohol warmth is significant and lingering, but not harsh.
