Alvinne Cuvée Sofie is a sophisticated Straight Sour Beer that elegantly bridges the gap between brewing and viticulture. This barrel-aged blond sour, born from the base beer Phi, undergoes extensive maturation in prestigious Bordeaux barrels from St-Emilion, Margaux, and Pomerol. The resulting sensory profile is defined by sharp, clean lactic acidity softened by the structured tannins of French oak. Bright lemon and tart green apple notes from the fermentation mingle with vinous red grape nuances and a whisper of vanilla. Despite its 8% ABV, the beer remains remarkably refreshing, finishing bone-dry with a complex, lingering wine-like character and subtle wood-derived astringency.
Appearance. Deep blond to light gold (5–7 SRM). Pours with a dense, white head that dissipates relatively quickly due to high acidity and alcohol content. Clarity is clear to slightly hazy.
Aroma. High intensity lactic sourness provides a sharp opening, followed by a complex layer of red wine, toasted oak, and grape must from the Bordeaux barrels. Esters of lemon zest and tart apple are prominent; no hop aroma is present. Low crackery malt serves as a subtle background.
Taste. A dominant, clean lactic sourness defines the initial impression. Complementary flavors of bready malt are quickly overtaken by vinous red fruit and citrusy lemon notes. The barrel aging contributes refined tannins and a light woody character without being vinegary. Hop bitterness is undetectable. The finish is very dry and crisp with a lingering tartness and faint oak astringency.
Mouthfeel. Medium-light body with moderate to high carbonation. Despite the 8% ABV, the alcohol warmth is well-integrated and provides a gentle glow rather than heat. Noticeable crisp acidity and a light tannic pucker.
