On the palate, moderate acidity balances the significant alcohol presence, delivering flavors of tart apple and oak-driven vanilla. Appearance. Orange to deep gold in color (8–12 SRM). Low head retention with reduced, white foam. Clarity ranges from clear to a slight hazy shimmer due to barrel contact.
Aroma. High intensity. Dominant clean, sharp lactic sourness accompanied by moderately fruity esters of lemon and tart apple. Significant barrel character introduces wood, light vanilla, and vinous Chardonnay notes. Negligible hop aroma; pale, cracker-like malt provides a subtle background.
Taste. Initial impression is a bold, clean lactic acidity. Mid-palate reveals bready and biscuity malt flavors that support the tartness. Barrel aging contributes complex wood notes and a sophisticated wine-like character derived from St. Emilion barrels. No hop bitterness or flavor is present. The finish is off-dry to dry, balanced by lingering sourness and a touch of oak tannin.
Mouthfeel. Medium body, enhanced by the high alcohol content. Low to moderate carbonation with a noticeable, well-integrated alcohol warmth. Crisp acidity provides a clean sensation, though a light wood-derived astringency may be present.
