Altuna Altuna is a quintessential Basque natural cider from Urnieta, presenting a rustic and bracing sensory profile. It opens with an intense bouquet of wild, tart apples, earthy orchard floor, and a distinct leather-like funk characteristic of traditional spontaneous fermentation. On the palate, it is uncompromisingly bone-dry with a sharp, citric acidity that cuts through the palate. Subtle tannins provide structure, while notes of bruised apple skins and a hint of acetic piquancy linger into a clean, puckering finish. Appearance. SRM 3-5 (Pale yellow to gold). Naturally hazy and unfiltered. Still or with very low carbonation; often poured with a long-break to produce a fleeting white mousse that quickly dissipates to a still surface.
Aroma. High intensity. Dominant aromas of sharp, tart apples and green apple skin. Significant rustic funk including hints of leather, straw, and an earthy orchard floor quality. A light, characteristic acetic sharpness is present. No hop or malt character.
Taste. Initial impression is bracingly tart and bone dry with zero residual sweetness. Prominent malic and lactic acidity defines the structure. Deep, complex fermented apple flavors with a light bitterness derived from apple tannins. Clean, slightly acetic finish with a lingering puckering tartness. No hop bitterness or malt flavors.
Mouthfeel. Medium-light body. Very low to still carbonation. Noticeable astringency from tannins. Light warmth present but well-integrated. No creaminess.
