Ryüjin is a vibrant Wild Specialty Beer that captures the essence of a red fruit orchard through a clean lactic lens. Brimming with the aromatic punch of fresh raspberries, this collaboration between Althaia and Alegría presents a striking interplay between refreshing acidity and a soft, fruity sweetness. The fermentation profile is dominated by lactic notes that brighten the berry character, creating a sensory experience that is both tart and approachable. Named after the Japanese sea god, it flows with a smooth, effervescent grace, offering a revitalizing finish that balances its wild, fruity core with a lingering, thirst-quenching crispness.

Appearance. Soft ruby red to deep pink in color with a slight haze; topped with a light, persistent pink foam that leaves delicate lacing.

Aroma. High intensity of fresh raspberries and mixed red berries. A notable clean lactic acidity provides a tangy backdrop, harmonizing with subtle esters from the wild fermentation. Malt and hop aromas are negligible.

Taste. Initial impression is a bright, refreshing tartness led by raspberry fruit flavors. Perceptible fruity sweetness balances the lactic sourness. Hop bitterness is absent, allowing the acidity and fruit tannins to provide structure. The finish is clean and refreshing with a lingering berry aftertaste.

Mouthfeel. Medium-light body with moderate to high carbonation that enhances the refreshing quality. Minimal alcohol warmth. Smooth texture with a light, non-astringent fruit-skin snap on the finish.
