Brizo transforms the classic German Pils into a complex, high-gravity experience through eight months of maturation in French Sauvignon Blanc oak barrels. The traditional crisp, grainy malt base is elevated by a vibrant bouquet of elderflower and dried lemons, while two distinct Brettanomyces blends introduce a signature funk. Tropical notes of passionfruit from the barrel integration meet the herbal, spicy nuances of German hops, resulting in a sophisticated profile that balances rustic leather and bright fruit acidity. Despite its elevated strength, it maintains a structured, dry, and crisp finish that honors its lager heritage while pushing into adventurous, wild territory.
Appearance. Deep gold (5-6 SRM) with a slight haze from the barrel aging and Brettanomyces activity; pours with a creamy white head that has moderate retention and leaves light lacing.
Aroma. High intensity featuring a complex blend of spicy and flowery hops, underpinned by low grainy-sweet malt. A significant fermentation profile presents Brettanomyces funk—leather, earth, and light spice—alongside vinous Sauvignon Blanc notes, elderflower, and dried lemon peel.
Taste. Initial grainy and cracker-like malt sweetness is quickly overtaken by a moderate hop bitterness and a rush of passionfruit and lemon zest. The fermentation character is assertive, displaying funky Brett notes and a light lactic-like tang. The finish is remarkably dry and crisp with a lingering herbal bitterness and a touch of oak tannin from the French barrels.
Mouthfeel. Medium-light to medium body, feeling slightly more substantial than a standard lager due to the 8% ABV. Carbonation is moderate-to-high, providing a prickly, refreshing sensation. A noticeable but well-integrated alcohol warmth is present, accompanied by a very light oak-derived astringency.
