This Straight Sour Beer undergoes a transformation through an eight-month development with a house blend of Brettanomyces, Lactobacillus, and Pediococcus. The result is a complex, refreshing profile where sharp lactic tartness meets a robust 8.7% ABV. Sensory cues of zesty lemon and tart apple mingle with delicate stone fruit esters, supported by a backbone of crackery and biscuity pale malts. The extended fermentation lends a sophisticated depth that evolves on the palate, finishing bone-dry. Its high-toned acidity and effervescent nature make it remarkably bright, while the underlying funk provides a lingering, nuanced character that rewards aging.

Appearance. Very pale straw (2-3 SRM) with a slight, hazy luminescence. It features a large, dense white head with poor retention and a highly effervescent appearance.

Aroma. The aroma is dominated by a sharply sour, moderately-high lactic character. Fruity esters of peach, apricot, and lemon are prominent, layered over a clean, crackery, and biscuity pale malt base. No hop aroma is present.

Taste. Clean lactic sourness is the primary impression, supported by bready and grainy malt flavors. A moderate pale fruit character, including citrusy lemon and tart apple, balances the acidity. The finish is bone-dry and crisp with no detectable hop bitterness or flavor, and never vinegary.

Mouthfeel. Light-bodied with high carbonation that enhances the crisp acidity. Despite the light weight, there is a noticeable alcohol warmth consistent with its 8.7% ABV, though it remains well-integrated and never hot.
