Almogàver / The Wall Mokumba
This Belgian Blond Ale presents a sophisticated interplay between traditional Trappist yeast and modern infusion techniques. A luminous golden pour supports a dense, creamy white head, releasing a complex bouquet of Ethiopian and Kenyan coffee beans layered over Bourbon vanilla. The aroma reveals delicate pear and bread-like maltiness characteristic of the style. On the palate, initial grainy-sweetness transitions into nuanced notes of cacao and bright red fruits, driven by the cold-macerated coffee. The vanilla adds a rounded elegance, smoothing the spicy yeast phenols and moderate bitterness. Appearance. Deep gold (6 SRM). Large, dense, creamy white head with excellent retention and Belgian lacing. Brilliant clarity.
Aroma. Moderate-high intensity. Grainy-sweet, cracker-like malt base with prominent notes of Ethiopian and Kenyan coffee and sweet Bourbon vanilla. Trappist yeast-derived pear and orange esters are present, along with subtle peppery phenols.
Taste. Grainy-sweet malt and faint honey-like sweetness are countered by moderate bitterness. Distinct flavors of roasted coffee provide a light acidity with hints of cacao and red fruits. Bourbon vanilla provides smoothness. Finishes medium-dry with lingering notes of spicy yeast and soft malt.
Mouthfeel. Medium body with a creamy, velvety texture. Medium-high carbonation provides a bubbly, mouth-filling sensation. Very low alcohol warmth.
