Almanac The Future Is Fluid
This vibrant West Coast IPA showcases a modern hop profile driven by the Pink Boots blend of Mosaic, Sabro, Simcoe, and Cashmere. The sensory journey begins with an aromatic explosion of tropical mango and mixed berries from the Mosaic and Simcoe, complemented by Sabro’s unique hints of coconut and cream. Cashmere adds a layer of soft lemon and melon complexity. On the palate, a clean, grainy malt backbone allows a firm bitterness to take center stage, leading into a crisp, bone-dry finish. Resinous pine and citrus zest linger in the aftertaste, embodying the bright, refreshing character of the style.
Appearance. Medium gold (SRM 6-8) with brilliant clarity. Pours with a medium-sized, white, creamy head that shows excellent persistence and leaves intricate lacing on the glass.
Aroma. High intensity hop aroma featuring a complex tapestry of tropical fruit, passionfruit, and blueberry (Mosaic) alongside resinous pine and grapefruit (Simcoe). Unique secondary notes of coconut and stone fruit (Sabro) mingle with subtle lemon and melon (Cashmere). Malt is low and neutral, providing a clean, cracker-like base with no esters.
Taste. A hop-forward profile delivers intense flavors of tropical fruit and citrus. Medium-high bitterness is sharp but clean, balanced by a minimal, grainy malt presence. Mid-palate reveals layers of coconut and herbal melon before transitioning into a lingering, resinous pine finish. The fermentation is very clean, resulting in a crisp and decidedly dry aftertaste.
Mouthfeel. Medium-light body with a smooth, crisp texture. Carbonation is medium-high, providing a lively prickle on the tongue. Alcohol warmth is light and well-integrated at 6%, with no perceived astringency or harshness.
