This complex Brett Beer showcases a rustic mash of raw and malted barley, oats, rye, and spelt, fermented in wine barrels with a unique blend of Brettanomyces and San Francisco sourdough yeast. The sensory profile is defined by a bright, tropical burst of passionfruit and citrus from a generous dry-hopping of Mosaic hops, which matures into deep, earthy funk over time. The inclusion of lemon and various heritage grains provides a zesty, multi-dimensional backdrop of spice and toasted grain, finishing exceptionally dry with a lingering, vinous complexity derived from its time in oak and wild fermentation.
Appearance. Hazy, pale gold to light amber (SRM 4-6) with a persistent, mousse-like white head and fine lacing. Unfiltered and naturally effervescent.
Aroma. High intensity; pungent tropical notes of passionfruit and mango from Mosaic hops are complemented by zesty lemon and a distinctive sourdough breadiness. Earthy Brettanomyces funk, wet hay, and subtle vinous oak notes provide significant depth.
Taste. Initial impact of tropical fruit and citrus pith, followed by a rustic, spicy grain character from rye and spelt. Exceptionally dry and crisp with a light sourdough tang and lemony acidity. Moderate to low hop bitterness allows the wild yeast character and vinous barrel notes to shine in a clean, lingering finish.
Mouthfeel. Medium-light body with a subtle silkiness from the oats and spelt. High carbonation provides a prickly, effervescent scrub. Low alcohol warmth with a crisp, bone-dry finish and no astringency.
