Almanac Saison Dolores is a vibrant, modern farmhouse ale that highlights a complex grain bill of wheat and rye. The aroma is dominated by a high-intensity blend of fruity esters, reminiscent of pear and orange peel, punctuated by sharp black pepper phenolics. The use of rye imparts a distinctive spicy character that complements the earthy and floral notes derived from a generous dry-hopping. Aroma. High intensity aromatic profile featuring fruity esters of pear, citrus, and apple alongside spicy black pepper phenols. The dry-hop character adds floral and earthy notes, while the malt provides a grainy, spicy rye edge and soft wheat presence.

Taste. Initial impression is crisp and dry. Malt flavors of crackery wheat and spicy rye are moderate-low. Hop flavor is moderate with floral and spicy qualities. Fermentation brings out medium-high citrus esters and peppery phenols. Bitterness is moderate to firm, leading to a very dry, lingering, and slightly spicy finish.
