This Wild Specialty Beer represents Almanac’s expertise in mixed-culture fermentation, moving far beyond simple kettle sours through extended aging in oak barrels. The profile is anchored by the addition of thousands of pounds of cherries, which impart a deep ruby hue and a vibrant, vinous tartness. Fragrant Vanilla Beans weave through the aroma, offering a floral softness that rounds out the sharp lactic acidity and earthy Brettanomyces funk. The result is a complex, multi-dimensional 'space juice' where the natural sugars have fermented away, leaving behind a bone-dry finish defined by fruit tannins, bright acidity, and a delicate touch of toasted wood.
Appearance. Deep garnet to ruby red (SRM 15-20); displays a pinkish-white head with moderate to low retention, often fading to a fine rim; slight haze is present due to the fruit and mixed-culture fermentation.
Aroma. High intensity featuring dominant tart cherry and maraschino notes; secondary aromas of floral Vanilla Beans provide a marshmallow-like sweetness. Noticeable lactic acidity and moderate funky Brettanomyces character (earthy, leather) are present, alongside a faint toasted oak background.
Taste. Initial impression is sharply tart and refreshing. Dominant flavors of bright, sour cherry flesh and skins lead into a complex mid-palate of leathery funk and subtle oak tannins. Malt flavor is low and cracker-like. The Vanilla Beans offer a perception of sweetness without actual residual sugar. The finish is very dry and acidic with a lingering, clean cherry tartness.
Mouthfeel. Medium-light body with moderate-high carbonation that provides a prickly, spritzy sensation. Very low alcohol warmth. A light, pleasant astringency from the fruit skins and oak aging enhances the overall dryness.

This mixed-culture is allowed to continuously ferment over months with real fruit in oak barrels.
