Almanac Alchemist Ambrosia is a vibrant oak-aged sour that beautifully balances the sharp tartness of a Straight Sour Beer with elegant floral and fruit additions. Intense aromas of fresh raspberries and fragrant rose petals lead the sensory profile, supported by a subtle woody depth from the oak aging. On the palate, a clean, dominant lactic acidity cuts through the fruit, revealing soft biscuity malt notes. This 5.7% ABV ale finishes exceptionally dry and crisp, with a lingering tart raspberry essence that highlights the brewery's expertise in refined, barrel-aged fermentation and botanical integration.

Appearance. Hazy, light pinkish-red to soft amber-rose (SRM 4–8). Features a thin, white-to-light-pink head with poor retention and minimal lacing; highly effervescent.

Aroma. High intensity; sharp, clean lactic sourness dominates, closely followed by fresh, tart raspberry notes and a distinct floral rose petal character. Subtle oak-derived vanilla or woodiness is present. No hop aroma.

Taste. Initial impression is a sharp, clean lactic acidity. Dominant flavors of tart raspberries and floral rose water. A light bready or biscuity malt profile provides a minimal backbone. Hop bitterness is undetectable (0 IBU). Finishes very dry and crisp with a lingering red fruit tartness.

Mouthfeel. Light body with high carbonation. Crisp, refreshing acidity provides a sharp, cleansing bite. Subtle oak tannins provide a hint of structure. Very low alcohol warmth.
