This Red IPA is a vibrant collision of rich specialty malts and punchy New World hops. The aroma is dominated by Simcoe, Mosaic, and Citra, delivering a complex bouquet of tropical fruit, dark berries, and a touch of resinous pine. These sit atop a robust foundation of Munich and Aurora malts, providing deep caramel notes and a toasted biscuit undertone derived from the Shepard’s Delight. On the palate, the sweetness of the caramel malt is swiftly countered by a firm, lingering bitterness that provides a structured, dry finish. It is a bold, multi-layered experience where luscious fruit meets assertive, session-closing bitterness.
Appearance. Deep amber to coppery-red (15–18 SRM). Brilliant clarity with a persistent, off-white to light tan head that leaves dense lacing.
Aroma. High intensity hop aroma featuring mango, passionfruit, and blueberry, paired with an earthy pine note. Moderate malt character showcases rich caramel, toasted bread, and a light nuttiness. Clean fermentation profile.
Taste. Initial impression of sweet caramel and toasted malt is followed by a surge of citrus zest and berry-like hop flavors. Medium-high hop bitterness is firm but not harsh, balancing the specialty malt sweetness. The finish is off-dry and clean with a lingering, resinous hop character.
