Taper is an evocative American Pale Ale that pays homage to the West Coast classics of the 2010s. A lean malt bill featuring specialty malts offers a savory foundation of baked bread and oven-hot biscuits. The sensory experience is dominated by a complex hop profile; kettle additions of spicy Columbus and sticky Citra are layered with dry-hopped notes of Amarillo and Simcoe. Appearance. Gold to amber in color (approx. 7-9 SRM) with brilliant clarity. Features a moderately large, off-white head with good retention and light lacing.
Aroma. Moderate to high intensity. Pronounced grapefruit and stone fruit esters are complemented by a resinous pine and spicy herbal character from the Columbus and Simcoe. Low to moderate malt presence provides notes of toasted bread and warm biscuits.
Taste. Hop-forward and crisp. Flavors of grapefruit, peach, and pine sap lead, supported by a moderate biscuit and toasted bread malt character. Firm bitterness is well-integrated, leading to a medium-dry and clean finish with lingering citrus zest and a resinous aftertaste.
