Setembre is a complex Straight Sour Beer defined by its mixed fermentation and patient maturation. A blend of the brewery’s Pura Pale and traditional Lambic, it undergoes twelve months of oak barrel aging followed by a year of bottle conditioning. The sensory profile is led by a bright, lemony lactic acidity and delicate notes of tart apple and stone fruit. Beneath the sharp sourness, a crackery and bready malt backbone provides structure, while the extended contact with wood imparts a subtle, dry tannic quality. It is highly effervescent and exceptionally dry, offering a refreshing yet sophisticated palate ideal for pairing with strong cheeses.
Appearance. Very pale gold (3 SRM) with a large, dense white head that recedes quickly. Clarity is generally clear, though a slight haze may be present. Highly effervescent.
Aroma. High intensity lactic sourness dominates, complemented by moderate fruity esters of lemon zest and green apple. A faint, earthy oak character and soft biscuity malt are present. No hop aroma is detectable, maintaining a clean fermentation profile.
Taste. Sharp, clean lactic acidity is the initial impression, followed by crackery and bready malt flavors. Moderate fruit notes of citrus and tart peach emerge mid-palate. Hop bitterness and flavor are undetectable. The finish is bone-dry and crisp, with a lingering lemony tang and a hint of wood-derived complexity.
Mouthfeel. Light to medium-light body with high carbonation that creates a prickly, refreshing sensation. Crisp acidity and a faint, mouth-drying tannic structure from the oak barrels. Minimal alcohol warmth.
